Nothing prevents you from just rolling every class! You got infinite time and you aren't paying anything to play here. The only decision that needs to be made is the race you wanna play. For that I'd just go for aesthetics and diversity. In my opinion you should play orc warrior, human rogue, nightelf druid, undead priest and troll hunter.

But what to play first? Think about professions. Wanna be a smith? Alchemist? Nodes will be VERY rare early on. For a new and fresh server, these professions will drastically slow you down. Stuff like leatherworking, enchanting and tailoring will be easier, faster and ultimately less frustrating in this early stage of the server. Think about the professions your characters should have.
Warrior with blacksmithing, rogue with engineering, druid with alchemy, priest with tailoring and enchanting, hunter with leatherworking? I think thats reasonable.

I suggest you to go with either a priest or a hunter. Just create both, play with the hunter first (it is easier to level with him) and switch to your priest or any other character at any given time depending on your current mood.
