Secondary professions

I haven't seen any post dedicated to Secondary professions. Compared to the amount of posts about primary ones they sound obsolete.

Should you pick one up?
Which one/ones (depending on class and other profs)?
Do they slow you down a lot while leveling?
Do they pay of late game?

I'm assuming you are referring to fishing/cooking/first aid.

First aid should definitely be picked up. Being able to heal yourself a little extra in combat is useful for all classes in both raids and battlegrounds. It shouldn't slow you down that much while leveling, just use the cloth that you'd normally get from killing humanoids and you'll be fine.

Cooking is good to have but it's usefulness varies depending upon the class you are playing. For classes that can't heal themselves with spells, pick it up. Having a good supply of food that provides stats as well should speed up your leveling speed if anything, especially for warriors. For other classes it's still useful for stat buffs, notably the latter ones that give you things other then stam+spirit. Since you get most of your food from killing beasts, it shouldn't slow you down too much.

Fishing can provide a nice complement to cooking, but this one WILL slow down your leveling speed due to how long you spend catching fish. It isn't required for cooking skill, and you can always build it up later if you decide you want it. So pass on it while leveling, but maybe build it up later.

All of these skills can be picked up whenever, and unlike professions aren't exclusive to one-another. So the only thing you waste by leveling them up is time.

The secondary professions all have their uses.

Every class should level First Aid, really. Including Priests. There are times when a 2K heal that doesn't cost mana and can be cast while silenced is just useful. It also provides Anti-Venom (which dispels poison debuffs).

Cooking is also a good profession for most classes. It provides Well Fed buffs that boost stamina and spirit and a few foods (such as Dragonbreath Chili and Savory Deviate Delight) provide other buffs as well. Later on, you can buff virtually any stat with food and if you're a Rogue you will need Cooking to create Thistle Tea.

Fishing is negligible depending on the class but Warriors at least need a fisher in the party to summon Gahz'ranka and obtain Nat Pagle's Broken Reel so that they can Taunt bosses (it also drops a Tome of Polymorph: Turtle and the Nat Pagle's Fish Terminator staff). Otherwise it's a source of Deviate Fish and Hook of the Master Angler (which gives an aquatic form with +35% movespeed, useful for non-Druids) among other things. This one is guaranteed to slow down your leveling speed, though.
