From a pure min/max perspective, yes, you dun goofed. BUT, undead have a very good racial so you aren't totally useless.
Anyway, on the topic of weapon skill, when you are fighting a mob level 61+ you have a chance to land a 'glancing blow' for 30% less damage than a normal hit. The glancing blow chance also takes precedence over your hit/crit chance so if you had something rediculous like 50% hit from gear and 100% crit (in theory, every auto attack should be a crit) you will still only crit 60% of the time, the other 40% will be a glancing blow for 30% less damage than a normal hit. This only applies to your auto attacks (white attacks).
As a fury warrior around 50% of your damage is from white attacks so having 40% of those attacks reduced by 30% is significant.
Now, weapon skill does a couple things. It increases your chance to hit/crit by a small amount, reduces the enemies chance to dodge/parry/block your attacks by a small amount AND it increases the damage of your glancing blows. The hit/crit/dodge/parry/block stuff is very minimal but at 310 weapon skill your glancing blows will land for 100% damage instead of 70% so getting 310 weapon skill is a big deal. Especially with a fury warrior where more white damage = more rage generation.
Are you going to be useless because you went undead? No.
Can you still top damage meters? Not in a super hardcore-max-tryhard guild but in a lot of other guilds, Yes.
Can you still be in the top 10 damage in a super hardcore-max-tryhard guild? Yes.
Keep in mind that when fighting mobs that are level 61 or less, weapon skill has almost no impact. So it really depends on what you are doing. If your goal is to do 40 man raids then undead is not ideal for sure but if you are just doing 5/20 mans, it's not that big of a deal.
