Talent Spec:

Base - 31 Points to start with, play with the rest
11/31/9 - The Talent spec I have chosen to use
(HERE is a picture of the talent build, credit goes to Cysthlen)
13/38/0 - Alternate build to use

I'm sorry i am not following, are you asking for a new Talent Spec? Do you need advice on how to tank? I'm not sure what your asking for.

So just out of curiosity, is there a specific HP we should aim for as well? For example let's say I want to do basic raid tanking (when possible) and I'm already defense capped. What HP should I shoot for before grabbing avoidance? Thank you!

You have already fair amount of avoidance by Talent tree.

Minimum HP requirement for Raids is 4500 unbuff.
Anyway go for Full HP enchants > Block > Parry > Dodge.

Our Block Value is 30% higher than Warriors and Decrease much more the damage you receive .
+ Block is Aggro Machine for us.
Anyway we have issues with HP so do take enchants/gear as much as you can get once you got the Def Cap.

well you don't need to spam HS so weapon is kinda your choice as SoR scales with weapon speed anyways, problem right now is the lack of spellpower / Sageblade that weapon is beast for pala tanks with the Force reactive disc.

go with spell damage weapon , spell damage ench on weapon and spell damage consumes this will help you tons on treats.

avoidance is not much of an issue , especially not that good weapons for us.

many have different point of view but my recommendations are to get spell damage weapon and use that ench/cons i recommend so you don't risk the tanking gear to survive.

you benefit this way 2 things - strong aggro and avoidance at same time
